Long time much needed update!

Running lately has been pretty hot, and this guy has been my lifesaver

Oh yes, a peach colored sweatband has been pretty amazing at helping me pretend that I could reduce my sweatyness.

Used the last of my tayberries in a quick tayberry peach freezer jam, it’s absolutely fabulous on vanilla ice cream!

Made some whole wheat pumpkin bread based on this recipe at (neverhome)maker. I followed the recipe just subbing in 2 cups of whole wheat flour + 1.5 cups AP flour for the flour used. In retrospect I should have upped the olive oil or liquid in these guys because I ended up with a pretty dry bread (though thoroughly enjoyable with jam).

Whisked together the wet ingredients.

Punched down my whisked together dry ingredients

Squished them together

Kneaded until I had dough under my fingernails & it formed a nice ball

Let it rest, and then formed into knots & rolls (not pictured) and then I tossed it in the oven

The final result (minus a few who didn’t live long enough to be photographed). Overall pretty tasty. Had one with almond butter and tayberry jam, YUM!

As a side I sauteed up some collard greens and added in some balsamic vinegar for a nice sweet/tangy kick.

And I just wanted to add a picture of what used to be my 5lb bag of spinach. I blanched and froze the last of it last week, but I did make a nice dent by using it in smoothies, sautees and salads!

Not quite ready for a new one… but maybe before the summer is out I will be!
